This Baked Potato Casserole Is The Perfect Family Dinner

Mondays call for an extra tasty dinner, right? This baked potato casserole is great for filling some tums and it’s seriously tasty.

All you need is some choice ingredients…

Ingredients:

2 1⁄2 lbs potatoes, peeled and quartered

4 tbsp butter

1 1⁄2 cups cheddar cheese, grated

3⁄4 cup milk

1⁄2 cup sour cream

2 eggs

3⁄4 cup scallions, sliced

5 slices bacon, cooked crisp

Salt and pepper

Method:

Preheat oven to 180 degrees.

Lightly grease a shallow baking dish.

Cook the potatoes in a large pot for 20-25 minutes. Drain well and return them to the pot.

While potatoes are still hot, add the butter and mash until smooth.

Stir in 1 cup of cheese, milk, sour cream and eggs until well mixed. Then add 1/2 cup of scallions, 3 slices of chopped bacon and add salt and pepper to taste.

Spoon into the prepared baking dish. Sprinkle with remaining cheese and 2 slices of bacon, chopped.

Bake uncovered for 35-40 minutes or until the top is lightly golden brown. Sprinkle with remaining 1/4 cup of scallions and serve.
