Pancake Tuesday is one of our favourite days of the whole year, and this year we’ve decided to experiment a bit with our pancake recipes. While you can’t beat a good squirt of maple syrup, some butter, lemon and sugar or chocolate spread, we thought it would be great to try something new this year…
These are just some of our favourites.
Oatmeal Cookie Pancakes
These pancakes are relatively healthy compared to the classic pancake, so you can definitely indulge in these.
Ingredients:
1 cup flour
1/2 cup quick cooking oats
2 tsp baking powder
3 tbs brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 egg
1 tsp vanilla extract
1/3 cup raisins
1 1/4 cup milk (whole cows milk or full fat coconut milk will both work)
Method:
Mix the flour, oats, salt, brown sugar, baking powder, cinnamon and nutmeg together in a bowl. Mix everything together.
Make a well in the middle, add the milk, egg and vanilla and stir until combined. Add in the raisins and stir everything together.
Add about 1/4 cup of batter to a hot pan, and cook on both sides.
This mix should make around 6 to 8 pancakes, depending on their size.
Lemon Poppy Seed Pancakes
Ingredients:
3/4 cup milk
1ts vinegar
1ts lemon juice
1 egg
2ts melted butter
1/2ts vanilla extract
1 cup flour
2ts white sugar
1ts baking powder
1/2ts baking soda
1/2ts salt
1ts poppy seeds
1ts lemon zest
Cooking spray
Method:
Mix the milk, vinegar and lemon juice together in a bowl and let stand for about 10 minutes to allow the mixture to curdle.
Add in the egg, butter and vanilla extract and whisk.
In a separate bowl, mix together the flour, sugar, baking powder, baking soda, salt, poppy seeds and lemon zest. Pour the milk mixture into the flour and whisk until the batter is smooth.
Pour 1/4 cup batter onto a hot pan and cook for about 2 minutes each side.
Pancakes With Caramelized Peaches
Ingredients:
1 cup all-purpose flour
2 tbsp flax seed meal
1 cup milk
1 egg
2 tsp baking powder
1 tbsp sugar
2 tbsp melted butter
Pinch of salt
1 peach
1 tbsp brown sugar
1 tbsp butter
Method:
Combine flour, flaxseed meal, sugar, baking powder, salt, milk, egg and butter and whisk until combined.
Cook the mixture on a hot pan, until brown on both sides.
For the caramelised peaches melt some butter in another pan and add one tablespoon of brown sugar and wait for it to caramelise. Add peach wedges and fry in the pan for two minutes either side.
Stack the pancakes and serve with the peaches on top.
