When it comes to the weekend, the last thing you want to do is have to trawl around a supermarket. Luckily for us, these amazing avocado eggs only contain five ingredients and are bursting with flavour!
Better still, it’s full of super healthy ingredients so you’re starting your day off on the right foot.
Amazing Avocado Eggs With Vine Tomatoes
Here’s what you need…
3 Eggs
Brown Bread
1 Avocado
1 Lemon
Cherry Tomatoes
Here’s what you need to do…
The key to this recipe is choosing a ripe avocado when doing your shopping. It should look dark on the outside and a little soft to the touch.
Slice around the middle of the avocado and pull the two pieces apart. Remove the stone, scoop out the filling and chop into chunks.
Place in bowl and season with salt and pepper. Add the juice of a lemon and stir it all up.
Add some oil to the pan and add your tomatoes.
Slice up your bread. Lightly toast it if you want a little extra crunch.
When the tomatoes have softened, remove from the heat.
Crack three eggs into a bowl, add salt and pepper and stir together.
Using the same pan on a medium heat. Add the eggs and stir continuously.
Take them off just before they are cooked.
Place on the bread before topping with your avocado and serving the tomatoes on the side.
There you have it – a scrumptious breakfast, without the guilt!
